I have been baking croissants for a year or so now. They are pretty good. Not perfect but pretty good. The secret is to have plenty of liquid (milk, eggs) in the dough, but not too much liquid. (1/n)

Baguettes! Definitely a work in progress. These are 85% AP, 15% KA’s formerly known as stoneground, 70% water, 50% starter with 90% water. Baked 490F with steam for 10 min then 15min. #sourdough #breadsky #bakesky
