I worked on the captioning team in my office (college accessibility department), and captions have to be redone by a human for every submitted video that has auto-generated captions.
Every single one. AI is not a magic access tool. It mostly just clogs up the gears.

Just so you know, I work in accessibility in higher education, so I meet a LOT of blind people. Most of them do appreciate well written alt text, even if it's just a short but informative sentence...
