And there are lots of shelf-stable microwave foods! Various soups, Mac & cheese, flavored (or plain) rice, popcorn obviously. Plus you can cook with it - baked potatoes, a quesadilla in a pinch, eggs, cake. (In your shoes I might also throw a cookbook in with it to inspire her)

Microwave? Still have the no-freezer problem but can heat other things (including microwave baked potatoes) and no exposed heating element so safer from a fire POV
