I would not worry about compatibility between Windows and Mac much unless you are doing something that might depend on Windows hardware. I was doing a transport layer for a client and had to test both and on browsers. Also steam libraries should be tested on both, Mac is more likely to be a problem.

Yes, but that is because I am more comfortable with Mac than Windows. I have the editor in 1 space, Rider text editor in another, and sometimes a graphic program in the third. I still use a Windows machine for testing sometimes. I will do some VR soon and will go back to Windows when using Oculus.
