PEACH UPSIDE-DOWN CAKE Upside-down cakes are classic, but we're putting a twist on them in this recipe by using peaches instead of pineapples! You can use another stone fruit of your choice, or even more slices if you like. MAKES 8 TO 10 SERVINGS ½ cup unsalted butter, softened ¾ cup granulated sugar 2 eggs 1 egg white 1 teaspoon vanilla extract ¼ cup whole milk 1½ cups plus 2 tablespoons cake flour 1½ teaspoons baking powder 1 teaspoon salt ¾ cup unsalted butter, melted ¾ cup firmly packed dark brown sugar 2 firm but ripe peaches, pitted and sliced Preheat the oven to 350°F, and grease and flour an 8-inch round cake pan. Line the bottom of the cake pan with parchment paper cut to fit. In a large bowl, beat together the butter and granulated sugar until fluffy. Beat in the whole eggs, egg white, and vanilla, and beat for 2 to 3 minutes. Mix in the milk. Add the flour, baking powder, and salt, and beat until combined. Pour the melted butter into the bottom of the greased cake pan and tilt the pan around so the butter evenly coats the bottom. Sprinkle the brown sugar evenly over the butter. Arrange the peach slices on the bottom of the pan, on top of the butter and brown sugar, in one even layer. Pour the cake batter over the peaches, and spread evenly in the pan. Bake until a cake tester inserted into the center of the cake comes out clean, 35 to 40 minutes. Let cool for 10 minutes. Place a serving platter upside down on top of the pan. sing oven mitts, invert the platter and pan together in one swift motion. Give it a gentle shake, if needed, until the cake releases onto the platter. Cut into wedges to serve.

We got tickets to Hanging Lake on the 4th and it was just incredible.
A sun-dappled mountain stream runs through a creek bed lined with ferns and green trees. An aqua mountain lake with bright green pond scum, a waterfall on the far side running over moss and rocks, with the bluest sky above.
