If you're code emits a signal before the receiver is ready to await it, the signal gets lost in the void.
Adding a single frame delay before emission can ensure proper setup.

I've never actually done enemy AI before so I'm trying to take my time with it and fully understand what the heck is going on.

I usually hand draw most of my game art but I thought I'd give pixel art a go to keep it simple for my first game.

Sure it's handy to write down what you wanna build and plan how you might do that.
But the advantage of being a solo dev is you're a lot more agile. You can experiment as you build and let those creative juices flow!

Don't just blindly write down everything it tells you to, it's not always perfect.
Try to fully understand what the AI is generating and make sure it fits within the context of what you're trying to do and also the bigger picture.

Lately I've been using claude AI to help me with some trickier logic and it's helped immensely!
I'm improving so much faster with the help of AI, but the trick is not to rely on it too much.
