One of the hardly ever discussed elements of German pub culture is the "Hausmarke" (lit. "house brand"): pubs get surplus kegs of lager for a lower price, but in turn, they can't say which beer it is. It's always a surprise to order it, sometimes it's just okay, sometimes it's excellent like today.

Yesterday's dinner: nohut dürüm. Chickpeas pan-fried with spices (cumin and chili powder) and wrapped in a thin flatbread with a simple salad of parsley, red onions, lemon juice and sumac. Absolutely delicious, and so incredibly easy to make.

I hadn't baked a sourdough loaf in a while. This one that I baked today came out quite alright.

I recently discovered oblique imagery of Berlin dated 1954, including my neighbourhood. In one of the photos, a half-torn-down wall can be seen on one building. The funny thing is, I took a picture of the same building just last June, and the wall is still in the same state as 71 years ago.

What's really nuts though is how cheap the beer is to take away: just €11 per 5 litre party keg. So of course we got two.

So it does not just preserve a traditional Brewing technique, but also one that used to be rather widespread in German brewing, one of these traditions being Bavarian wheat beer. Not even traditional wheat beer breweries do this anymore in Germany.

And there's something I can't say often enough, why preserving the Burton Union is so important, because it represents the technical evolution of what German brewing calls *Spundgärung*, fermentation in a cask where all foam (including yeast) is expelled through the bunghole.

Another alcohol-free Helles, and this one is one of the best ones so far. Only slightly smells like an alcohol-free beer, but tastes pretty much exactly like a Helles, just without any taste of alcohol.
