I promise I'll shut up about it soon, but I am really proud of the first time I've gone to a restaurant, liked an item with a general description but no details on the menu, and recreated it from a generic base recipe that I tweaked on the way.

Will need to at least double my chile roast this year.

Some good notes. 45 minutes is a good middle ground tomorrow the potatoes. I went up to two hours on the beef. Erred a little on the chewy side because I hate when round goes too far the other way. Chuck may be better. Also, wound up all 4 cups of stock as I added, and consistency is just right.

Forgot how much a pain cooking with round can be. Needing constant monitoring now to catch it after it's a bit chewy but before it gets mealy.

Like I don't like Stenhouse, but that still should have been a caution. And at least Hocevar's cheap shit didn't pay off for him, but that added up a lot of good cars.

Alright, by an hour, potatoes were getting a little too soft. Not a huge deal, but I like some structure for them. So fished out not just to keep an eye on the beef. This may need slight ratio adjustments, but the look and taste are quite close to what I was aiming for.

Slight update - potatoes seem good at about 45 minutes in. Beef needs just a bit more to fully get tender. May be good to work backwards next by starting meat before potatoes since the meat takes a bit longer. But so far very pleased with this.
And then adding the potatoes and the rest of the two cups of stock. Gonna get this to a simmer and get the beef/potatoes tender. I'll try an approximate time when I know it.

Maybe some of these guys didn't get too bad out of it, and Blaney and Wallace made it through, but what a stupid block ro throw at that point of the race
