So here is the tripe dish from Peru: Cau Cau. This is legitimately from my mom (and possibly my abuela) .You can see my hand written version, I wasn’t quite 5 yrs. Starting grade 1 my mom bought me a copybook and showed me how to wrap it in cotton ( a rattan 😉). And I began my journey with 🍜
