The performance penalty for Splat Maps vs Vertex Colors is negligible (it's 1 extra draw call) and splat maps give far better results. The Godot shader can accept both anyway.

Modern hardware handles poly counts fine. Draw calls are the real bottleneck, so reusing the same small batch of textures is great for performance.
