Since beef is sky high, we’ve been eating a lot of pork lately.
This was on sale for $1.99/lb!! Pork loin, which is lean but I intend to cut this 3.5lb sucker into 2 servings.
Where the fat is highest = a single roast. The rest are chops.
Dry brine overnight.
My kitchen, my rules.
