If you’re looking for an excellent vegetable forward (and vegan) cookbook, I highly recommend Vegetable Kingdom by Bryant Terry. We made sweet potato and asparagus po boys for dinner tonight and they were excellent. So far, everything I’ve made from this book has been delicious
