I am most excited about rice! I'm Hispanic so rice is a very frequent meal and one of my favorite foods. For thanksgiving my family makes it with beans, sausage and lots of peppers which I enjoy very much.

This week I learned that 1/3 of adults in the United States are obese. I think this is an important fact because as a future healthcare provider, I feel like it will be our job to provide solutions for situations like this one. This is very helpful! I've realized that staying hydrated throughout the day is one of the easiest way to control hunger, specially for me, I like to only have two filling meals a day and a light snack around 3-4pm while drinking lots of water all day. #beh353 @beh353.bsky.social

The barrier I relate to is (Lack of time to plan, shop, prepare and
cook healthy foods). As a full time college student, it can be hard to prepare healthy foods specially with the amount of school work, easy/fast meals tend to be the best option, but also unhealthy. #beh353 @beh353.bsky.social

It's really interesting to see how vegetarian nutrition changes depending on your age. It makes sense since Kids, pregnant people, adults, and older adults all need different things, and sometimes you really do need supplements or fortified foods to fill in the gaps. #beh353 @beh353.bsky.social

I researched a Cabbage Soup Diet, a 7-day plan where you mostly eat cabbage soup. It helps lose weight fast, but it’s mostly water weight, not fat. It’s super low in nutrients/calories, so it’s not realistic longterm which makes me wonder why people still try these diets. @beh353.bsky.social #beh353

I love pasta for dinner! Recently I discovered a Turkish pasta. To boost nutrients, I use whole wheat pasta for more fiber, lean ground beef for more protein, the sauce is greek yogurt mixed with garlic, and I love to add spinach, peppers, and tomatoes just for taste. #beh353 @beh353.bsky.social

I really like this! as a full time student it can definitely be hard to find time to eat and enjoy your food, specially with early classes, breakfast can be controversial at times. But I definitely will be trying harder to include a good breakfast to my morning routine. @beh353.bsky.social #beh353

In my 24hr recall, I had grits and bacon, white rice and wontons, an iced shaken espresso, banana bread, a bowl of cereal, and 4L of water. Im not surprised, I would say this is a normal diet for me, I tend to track my water intake everyday so it was easy to do. #beh353 @beh353.bsky.social

Someone asked why melted cheese tastes so much better...I love these Qs, it's food science we take for granted!
Melting breaks down fats and proteins to release umami + aroma/flavour compounds. The gooey texture spreads to the tastebuds better + the Maillard reaction creates that toasty flavour.

I learned that beans are called an incomplete protein since they don’t have all the amino acids, but our bodies can make the ones they’re missing. I also thought it was cool that protein is really important for weight loss. @beh353.bsky.social #beh353

This connects to my current nutrition course being healthy doesn’t happen overnight. It takes time, consistency, and knowing the steps needed to reach your goals. Being aware of the steps necessary to get to a health goal is very important.
