Norovirus remains to be the number one pathogen implicated in Foodborne Illness and is typically spread to Ready To Eat (RTE) foods through barehand contact by ill employees which is why minimizing barehand contact with RTE foods, using gloves, utensils, or other barriers is required by the FDA.
There is a temperature range known in food safety as the “Danger Zone”, roughly 40°F to 140°F (about 4°C to 60°C).
In the Danger Zone, bacteria can double in number roughly every 20 minutes.
