You can only learn the dynamics of a system if you sample it at least often as the shortest timescale of interest. If you under sample, you can learn nothing about fast processes. This is a basic fact of dynamical systems and needs to be part of all quantitative training.

The Black Forest Mill in Highland Mills, NY. It was always very good until it collapsed, but not uniquely so, except their German potato salad was perfect. Never had one that met the mark since. I want some now.😔

Hing Loon in Seattle’s Chinatown/International District. I miss the salt and pepper pork chops and no one else’s hit the same. And the ladies running the place were so sweet, as were the complimentary sesame balls. 💔
