Butter Chicken Masala

A rich, fragrant and comforting curry learned in Goa. This version is not spicy, instead it is deeply aromatic, buttery and gently sweet from cashews and tomatoes. Beautiful with rice and/or naan.

Lookit, #speirgorm we’re doing this wrong. We need to stop compulsively correcting the British on this kind of nonsense, it’s clearly pathological.

Instead, we should just shut up and not say anything. Worst case scenario is they end up building some transport infrastructure in Ireland by mistake…

The temp is for a fan oven. Prove the dough for one hour, then turn it out and fold the dough a few times, shape it into a round. Then place it seam side down on baking paper, cover and rest it for 15 mins before baking as per the rest of the recipe.

Chicken and King Prawn Spice Bag

A lighter, air-fried version of the Irish Chinese takeaway classic. Crispy wings, seasoned prawns, blistered peppers and onions tossed through hot chips and spice mix. Big flavour, but light on oil.

Assemble. Add chips, wings and a few teaspoons spice mix to a large bowl and toss well. Add prawns and vegetables, toss again and adjust seasoning if needed.

Finish with sliced red chilli if you like and serve immediately.

Cook vegetables. Stir fry onion in a little oil for 1 minute, then add peppers and cook another 3 minutes until slightly blistered but still crisp. Toss with a little spice mix.

Cook prawns. Toss prawns in remaining 2 tsp potato starch plus ½ tsp spice mix. Heat a little oil in a pan and cook prawns for 2 minutes on one side, then turn and cook for 2 minutes on the other side until cooked through. Remove and keep warm.

Prepare vegetables. Slice the onion and cut peppers into chip-sized strips.

Finish wings. Toss cooked wings in 1 generous tsp spice mix. Return to air fryer or oven at 200°C for about 6 minutes until deep golden and crisp.

Cook the chips so that they finish at the same time as the wings.

Mix the spice mix ingredients together and set aside.

I make my own oven chips. Slice 500g of potatoes into thick chips. Blanche for 3 mins in hot water. Drain, let them steam to dry a little and toss with 1 tsp of olive oil. Air fry at 200c for 20 mins, then at 240c for ten mins, or until crisp and golden.

You can pre-made oven chips if you prefer.

Cook the wings.
Air fryer: Cook at 180°C for 15 minutes, turn and cook another 10 minutes.
Oven: Bake at 190°C fan for 15 minutes, turn and cook another 10 minutes.

Method

Prepare the wings. Cut into drumette and wing pieces and discard tips. Pat dry well. Toss with baking powder and 2 tsp potato starch until evenly coated.

800g chicken wings
200g raw king prawns
4 tsp potato starch (or cornflour)
1½ tsp baking powder
1 large onion
2 bell peppers (1 red, 1 green)
4 portions oven chips

Spice Mix
2½ tsp flaky sea salt
½ tsp chilli powder
1 tsp white pepper
1 tsp onion salt
1 tsp Chinese five spice

so a month ago I was reading @markpackuk.bsky.social’s speech on Twitter in the lords and there were obviously fake stats the government used to justify Twitter’s UK reach and its continued importance to British audiences

UPDATE: I've had a response from the Cabinet Office!
"the statistics cited ‘19.2 million British citizens registered with X and 10.8 million families using the platform’ were provided by OmniGov, the government's media buying agency, who received this data directly from X itself."

In Ireland, where I am, the green chillies sold in supermarkets are generally varieties such as Serrano or Finger chillies. (Medium/hot varieties)
