When the wings have cooked for 23 minutes, remove and season with salt and pepper. Return to the air fryer at 200°C for 6 minutes until dark golden and very crisp — but not dry.

Toss the hot wings in the sauce until fully coated. Serve immediately.

Arrange wings in a single layer in your air fryer, leaving space between each one. Cook at 180°C for 15 mins, turn them, then cook for another 8 mins.

While they cook, make the sauce. Melt butter in a small pan, then stir in honey, molasses, ketchup & hot sauce. Taste and adjust the heat to taste.

Method
Portion the wings by cutting them into three at the joints, discarding the tips. Pat dry thoroughly with a kitchen towel to remove moisture — this is key for crispness. Toss in baking powder and the cornflour until well coated.

Ingredients
1kg chicken wings
2 tsp baking powder
2 tsp cornflour or rice flour
Salt and black pepper
40g butter
2 tbsp runny honey
1 tbsp molasses
2 tbsp tomato ketchup
4 tbsp hot sauce (Franks or similar)
