The closest thing to a pastoral care course I took assigned Senkbeil's "The Care of Souls," as our only contemporary work. Besides that we read Chrysostom's "Six Books on the Priesthood," Gregory the Great's, "Book of Pastoral Rule," Spener's, "Pia Desideria," and Baxter's, "Reformed Pastor."
