It is clear that Micheal Meyers never went to culinary school. If he had, he would have announced loudly that he was behind Kara Strode (and his other victims) with a knife by practically yelling "behind knife." Kinda loses something that way.

Yesterday we worked on espagnole sauce on steak. I made mine with asparagus. Not gonna lie. It was really good. Today, though, that turned into a steak, asparagus, potato hash cooked in clarified butter. Not gonna lie. It was even better. Nothing like a flavorful, crispy (yet fluffy) potatoes.

I am 50+ years old. I have a Bachelors, Masters, and PhD. Heck, I have been teaching for 26 years. Yet . . . even now . . . I still get that same sense excitement as my six-year-old self when I load up my backpack the day before school starts.

What's my solution to finishing 8 and 5 week writing classes on the same day? Blanch and shock tomatoes, chop green peppers, onions, herbs, and spend two days nursing (and smelling) a wonderful sauce while grading. Added benefit! I get to knead pasta dough to get out any extra stress at the end.

What to do for date night when it's a bazillion degrees and the world is burning -- tomato-watermelon gazpacho with basil and (extra) jalapeno. The only heat comes from the date, not the cooking.

We made some super yummy chocolate tacos last night that had dark chocolate, ground toasted cinnamon, and ground toasted pasilla pepper. They were particularly yummy once we added some blueberries. YUM indeed!
