When nuts are done, assemble salad: tear up handful of mint leaves. Sprinkle half the nuts on the greens, then half the oil, and half the mint. Place the burrata in the center and pour the rest of the oil over it, then sprinkle the rest of the nuts & mint. Add more salt to taste.

2. Greens with burrata, mint, and pine nuts: create a bed of greens (mixed, baby, whatever suits you). Heat a tablespoon of EVOO with some chili pepper flakes. Pour heated oil into a dish, and roast a handful of pinenuts in that pan, add sea salt.

1. Chickpea, cucumber, green bean, & tomato salad: Mix one can each of chickpeas and cut green beans with a cucumber and a large tomato. Add olive oil, sea salt, pepper, and curry powder to taste. Easy to scale up.
