When nuts are done, assemble salad: tear up handful of mint leaves. Sprinkle half the nuts on the greens, then half the oil, and half the mint. Place the burrata in the center and pour the rest of the oil over it, then sprinkle the rest of the nuts & mint. Add more salt to taste.

1. Chickpea, cucumber, green bean, & tomato salad: Mix one can each of chickpeas and cut green beans with a cucumber and a large tomato. Add olive oil, sea salt, pepper, and curry powder to taste. Easy to scale up.

I like being involved, and knowing that my center has a rep for showing up in a big way at the karaoke night, I dutifully signed up and couldn't have had a better time singing on my own, with my colleagues, and in a trio! My voice is STILL affected. #POD24 7/
