My all-time fave is Lentil Soup.
Put all in crock pot and cook about 3 hours on high. Salt to taste (I don't add salt; the kielbasa is salty enough for me.)
1 lb lentils, 8 C water, 2 bay leaves, 1/2 t black pepper, 1/4 t dried thyme, 1-2 t balsamic vinegar, 1 loop kielbasa sliced in half-rounds, 2 lg onions diced, 1 stalk celery diced, 2 lg carrots pared and finely diced
