Once at the 20 min mark. After the 40 min, just a few minutes at 450f, charring both sides. Honestly I left it on high a few minutes too long, but I kinda dig “just shy of burnt” when I’m grilling. The inside came out as great as expected though so it’s fine

This lobster tail was astonishing. Forgot to take a close up pic when it finished cooking but it was meaty and restaurant succulent. Red Snapper was hittin too

Found a simple tomahawk reverse sear recipe, set grill at 275f, cook 40 min, then high temp flame. Always had trouble grilling chicken (undercooked or burnt), then I realized I could just do likewise. Halfway through steak roast, put drums in 20 min slow roast then ~10 on higher heat. Came out great
