Started today with this, two tows and two shops and two tires put me close to meltdown, my 3:00 is ecstatic because she has her first girlfriend, my 5:00 is devastated because her mother has passed away, this day is a mad roller coaster and I'm DONE. If anyone needs me, check the blanket fort. 😵‍💫

I forgot to take a pic of the chopped basil before adding it, but you can see some green bits in this, the completed sauce. As always, measurements don't happen around here, just go by taste and feel and roll with it. Enjoy! 10/10

I wanted more flow and a slightly less chunky texture, so at this stage in went a couple of cans of tomato paste. Smooths it out a bit. 8/?

In a nice big heavy pot, sauté the garlic and onions in olive oil until they become mostly translucent. Enjoy the delicious smell, but wear swim goggles if you're as sensitive to onion fumes as I am. (Only thing that works for me, don't judge, eh?) 6/?

Next, alliums! Allia? Whatever. Garlic and onions, okay? I mentioned my cute garlic chopper in the pesto thread, and here it is! So handy, I'm telling you. So many cloves of garlic, and a good-sized onion too, white or yellow seems to work best. 5/?

You should end up with a lot of nice juicy red tomato flesh - there is just no way for this not to sound weird and serial-killer-y, is there? *sigh* Anyway... 4/?

Remove the tomato when it's cool enough to handle; the skin should slough right off. (Very satisfying.) Once it's naked, chop it up fairly small, removing the seeds because they get bitter when cooked. (Pretty sure I mixed these tomato guts with feta and tossed it all with couscous for lunch.) 3/?

To get the skin off quickly and easily, dunk the tomato in a pot of boiling water until you see the skin begin to loosen. Scoop it out (slotted spoon FTW) and pop it into a bowl of cold water to finish the process and also so you can touch it without getting burned. 2/?
