I've looked this up and doubted myself again later, and looked it up again for both of these

I know Champagne means it's from France but if you know anything about the Philippines with that name it seems plausible

Honestly I got a roast at Costco and cut it up into chunks - not the most economical approach but it was perfect

Yeah procuring mutton is half the challenge. Beef works very well for this dish anyway!

That being said the sauce is rich and brings a lot of flavor and heat so it would probably stand up well against lamb/mutton.

I have not. I am a little tired of lamb at the moment. Also my family gets wistful if I make chicken curry or mutton curry in any style other than their standard favorite. We don't have any such expectations for beef so I am more free to experiment there :)

You need to at least double the recipe, doing all that work for 1 lb of beef is not sensible

I have not had this dish in India so I don't know about the authenticity of the recipe but l, compared to other Nihari recipes I have tried, this one was pleasant to make and the final product was absolutely demolished by four somewhat light eaters with Desi palates so, I'm going to call it a win
