So even if you only get say 20 people but they pledged enough to pay for the printing, it goes through. They get what they wanted, and the other 80 copies would be available for you to sell directly from your own store.

Kickstarter doesn't take any money unless the project reaches its funding goal. It's a pledge system, like Patreon was before pay up front went in. You can make receiving a copy of the book a tier reward. If it is fully funding, regardless of how many individuals, everyone receives their copy.
