One thing I always love in older ff games is one-off maps that show a different angle from the revisitatable one you usually see. Lots of these in VIII now that I think about. VII has a few (obviously the church, but also Elmyra's house and Tifa's room)

Based on the new first soldier mini episode, Remake Part 3 is going to follow DoC and use "Wusheng" for the Five Mighty Saints. Not gonna change this in SAC yet but I already feel the headache setting in for when I have to refer to individual saints.

ffvii apparently had this stupid system in place where each region's shop keepers would speak with a different dialect. but probably because of the chaotic/disorganized development, only one shopkeep was ever even given an accent (the racist chinese one, not pictured)
