Day 4 — another bagel breakfast one half cream cheese one half butter, and then we had a seafood dinner, steamed mussels in a Dijon sauce (finished before we could snap a pic), my first lobster roll, and a bowl of clam chowder with oyster crackers.

Day 3–festival day 2

Bagel breakfast with oatmeal, plus second oatmeal because we had another long day ahead of us. Dinner was something called a phocket from a Vietnamese vendor. JP and I tried our best and did not finish it.

Day 1: festival day. VIP section had candy. We had arepas con queso for lunch, a sweet thai chili shrimp bowl for dinner, and a banana back at the hotel.

I got freaked out by the fish and chips menu because it’s all fried food, so I asked JP to order something for me. Sometimes it’s easier to eat something when he puts so much thought into what he thinks I might like.

Meal one: airline snackies and a ginger ale.

It’s nice that JPs parents are offering to provide us with coffee and that gesture is not lost on me. But I’m totally fine without it. I’m a guest in their home and I also don’t drink caffeine daily.

I’ve been to my long distance bestie’s ACTUAL APARTMENT WHERE SHE LIVES. TWO TIMES. It’s not just a backdrop for when we FaceTime it’s a real ass apartment and her cats are also very real. I got to hug her and go with her to all of her favorite places and I almost didn’t get to do that.

So many things have happened since then that I almost didn’t get to be a part of. I saw a sunset on a beach in Astoria, OR and thought “I almost wasn’t here.” I met my husband, reconnected with old friends in a really big and meaningful way, and i took my mom to that same beach in Astoria.

I am so so sorry. I went through this in September with my cat Melba and it still hurts so much. Her and her brother literally saved my fucking life. It does get easier with time, I promise it does. Grief is a nasty beast tho, so if you need to talk PLEASE don’t hesitate to DM me.

I’ve done this with quinoa. Typically I do a 2:1 protein to quinoa ratio. I imagine doing it with lentils would be about the same measurement. I would personally cook the lentils and quinoa first and then add it to the beef because of how much lentils and quinoa expand during cooking.
