Cranberries are like bracingly tart and acidic so they’re a good candidate without lemon or citric acid - the orange is honestly to mellow them out a bit lmao

Citric acid makes it possible to use any fruit. Usually you’d throw lemon juice in there to sorta force the chemical reaction for curd to get the right texture but it is a spectacular time to be alive

I love making fruit curds and honestly my next move is to just buy a bag of citric acid so I can make anything into a curd - even fruits that traditionally wouldn’t be acidic enough for the chemical reaction to work >:}

Cranberry curd tart!

The tasty stuff in the middle is a silky cranberry orange curd and the crust honestly smells and tastes like a big oatmeal cookie because it’s oat based and has cinnamon in it

By twice cooked I mean in order to make the curd you have to cook down the cranberries with orange juice and zest and then you blend and strain them to get rid of all the solid plant matter like seeds and skins - so you’re bringing it to a warm temp to begin with as opposed to starting with juice

I am realizing because this is like a twice cooked recipe so you’re kind of already working with higher temperatures so I may have ever so slightly over calculated the amount of time the final bake would need but again it’s splitting hairs tbqh but you know how artists are lmao

That's where I'm at. I don't really do pre-made lemon juice because it's so easy to just juice a lemon which I generally keep around the house anyway so I'd rather just zest and squeeze them myself and my frequent need honestly justifies the tool.
