Bro what? It’s 3” thick. It’s like trying to cozy up with a medieval illuminated manuscript. Ugh.

Fun fact, I am 95% sure I emailed asking to skip this because I hate eye and teeth things in horror - and yet it came to my house anyway. Oh god.

Okay, one shelf of… 23? I’m using LibraryThing to build an app database as I go because I can never remember what I have or which special edition it is so hopefully this helps. 🤷🏻‍♀️

Mycroft is something like 24 pounds and he’s been surprisingly gentle with all our trees. Though does like to lay under them and also the water splashing thing.

(Also as a bonus, my kitchen assistant Leeloo woke me up at 5 am by throwing up off the side of my bed.

I took care of that, then her. Tried to get her to drink a little water but she refused, so I ended up making her dog soup with some leftover rice, water and a touch of our turkey broth. Fun!)

Okay, ngl, I got knee deep into desserts and forgot I was doing this and so here is like the pie equivalent of the montage of the former champ boxer training for his comeback. A pietage, if you will.

Apple crumb and cherry tart. Chocolate cake is in the oven. We have pumpkin and peach on deck.

So silky and not separated at all, and yet it tastes completely like cheese and not milk and flour. We seasoned it with just a dash of Crystal hot sauce, a pinch of mustard powder and a little garlic powder and pepper.

Evaporated milk, whole milk, sodium citrate, which will smoothly bind the cheese into sauce form and is what they use to make American cheese, and and 6 blocks of shredded Beechers Flagship cheese.

We season the potato layer with black pepper and kosher salt, then layer cheese and pour over some cream. Repeat 4 times.

I’m par-baking (cooking to the halfway point) this today because it will give the potato starch extra time to thicken the cream and experience has taught me it’s better day 2.

Okay here is where things get controversial: I don’t like sweet sweet potatoes that are done with marshmallows and maple syrup.

So my go-to sweet potato is a savory gratin of sweet potatoes layered with cheese (gouda/gruyere/parmesan this year) and baked in a garlic thyme infused cream.

Gravy! Keeps like 5 days in the fridge so it’s great to do ahead. We did 2 tbsp butter and 3 tbsp turkey fat cooked with 1/4 c flour, then slowly whisked in 4 c. stock. Seasoned with thyme, black pepper, smoked salt, a touch of soy and apple cider syrup.

Stock, eggs, parsley whisked in and our cubed and toasted milk bread. It goes into a buttered pan and then the fridge until tomorrow when it goes into the oven. I made an all-veg version as well for our vegetarian guest, which was the same but with veg stock and a little cream instead.

Okay we’re cooking safe sausage and onion/carrot/celery in half butter, half our rendered turkey fat. Seasoned with chopped sage and garlic and black pepper.
