Duke's Archive, Catacombs/Tomb of the Giants, and New Londo Ruins are all perfectly fine levels. Sure Crystal Caves are a little annoying, but you're only in them for like five minutes.

If it makes you feel any better, IIRC even actual fencing/HEMA/martial arts fighters run into this problem, because untrained noobs often attempt moves that are so dangerous and suboptimal that the trained fighters--not expecting anyone to try something so dumb--are caught off guard.
