I soak fresh or frozen fine green beans in chicken stock while I prep everything else, then put over heat just barely long enough to heat the stock. Cook the sauce separately & combine with beans, only putting in the oven long enough to crisp the topping. No mush!

I make a béchamel, fresh fine beans, tons of baby bellas version that I could eat as its own meal. Couple of years ago I made an experimental secondary version with a bunch of bacon, gouda, chipotles in adobo sauce & a squeeze of lemon added to the sauce & now it’s the family standard.
