There are so many pour over possibilities out there. Some deliver more consistency than others. I personally use V60 and Kalita Wave (modified). With Kalita I get much better results than with V60.

I agree with that.

I also feel that 99% of the people that start a coffee shop lack a lot of knowledge. How to properly dial in a coffee, the water...all the variables that impact a cup of coffee... If you don't know why your coffee is not tasting on point, how can you deliver consistency.

Talking only about the consistency of their coffee. How do they manage that? Versus why specialty coffee shops don't ?

We are seeing much better decafs on the market taste wise. I recently super tasty decafs from Manhattan Coffee Roasters and from Suedseite Coffee Roasters.

Maybe the improvement on the quality of decafs which we are seeing on the market, could contribute to that :)

I have had beans from both. And once, I've even participated in a "cupping" organized by Scott Rao here in Europe. I enjoyed all the coffees I've tried.

I only tried Sey once and I really liked the coffee.

It'll always depend on your personal preferences. Origin, varietal, processing...

I am super flashed by co-fermented.

The one thing I don't know is, if a bad harvest, by simply being processed as co-fermented, can deliver a good/high score coffee. The implications of this for the farmers and industry in general could be huge.

Does anyone have more info on this?

I love co-fermented coffees. They are super fun and some of them extremely tasty.
