the bullshit via the about:config page or via a User.js, but that's a tall order for a lot of people who just want a browser that doesn't need more tinkering ootb, and there's no guarantee that Mozilla will allow that to be the case forever, so I say go for a good fork in the meantime

about Floorp (yes that's its name, don't laugh), Waterfox I don't have much experience with but it seems alright, for Chromium I'd say go with Vivaldi or Ungoogled Chromium, but that's outside my expertise as I don't touch Chromium browsers much
I expect that it will be possible to just toggle out
