Categories, e.g. “reproductive role” or “developmental pathway”, are binary if and only if (and only to the extent that) we define them to be binary, which is trivial. They can be useful but do not supersede reality.
Others, e.g. “gamete potential”, are metaphysical.

As a material, biological trait of an individual, sex is nothing but their sex characteristics.
If someone means something else when they refer to an individual’s sex then they are necessarily referring to something non-physical, whether that’s a manmade category or metaphysical essence.

It’s true that some characteristics are individually discrete, but they are not trivially so—gonads in particular, since ovotestes exist—but, taken as a whole (which we should), represent a continuum: for any two people, there exists (or can exist) someone whose sex is intermediate.
