Working on our New Year's Dough... Just pre-shaped the dough and we're letting it rest for a while before final shaping, then cold proof time. My 16y/o has helped me with every step so far. This one is a 71% hydration instead of my normal 78%. What have y'all done for New Year's? #sourdoughsky

I feel like my 8th Loaf came out well but I didn't score well for the pattern and an ear. No crumb shot yet because we're taking this, blind, over to my boyfriend's mom's house for dinner tonight. (That's why it's in a bread bag and uncut)

She's not feeling too great...
I'm hoping she's okay by morning, though. I was told this surgery is pretty dang rough on the animal for the first few days after, so I shouldn't sit here too worried, right? Right?!

My ESA has bladder stones. She's about to cost me over 2k in surgical costs I can't REALLY afford, plus an antibiotic, tomorrow morning. I have to put it on a credit card I'm going to immediately max out. I have to do it though... She means the world to me. She's only 4 years old and my best friend.

My #depression #sourdough loaf turned out overproofed and dense and a little gummy? It's not under-fermented - I assure you - but I didn't know over could produce the same ish texture. 🤷🏻‍♀️ The pattern baked nicely but the oven spring wasn't really there, obv. I'd like an opinion on this loaf.
I actually quite like the tight crumb, low hole count, and it's got good spring back if squished. It tastes GREAT and everything is pretty even crumb wise... I'm fairly happy with it, all things considered.

Now VS last night.
It DID double in size at this cold temp in my kitchen, there's beautiful bubbles in this dough, I'm hoping it's not over proofed but it looks and feels gorgeous to me.... But what do I really know? 🤣 #learning #experience

And Audrey II is still growing after her 1:2:2 feed this morning. The cool temps in the kitchen mean she's a little slow but she's consistent. She's almost tripled in size and still going. I'm hoping to make dough this evening like my other post said. ❤️ #sourdough #starter #growth #learning

3 weeks 4 days, now. I fed a 1:2:2 without discarding so I could hopefully make dough tonight. My plan is to leave the dough at room temp for 15 hours, if I can time it right, before a cold proof. Room temp for me is 64°F so rise needs to be close to 100% before cold proofing. #sourdough #starter

5th loaf completed and cooling.
It's not perfect but it rose beautifully. I 🙏 hope it's properly fermented/proofed but I won't know for sure until I slice into it later. The BF time on this one was insane. #breadsky #sourdoughsky #bakingsky

Those bubbles though. 🤩 She has been busy during fermentation!

Rough pre-shape done. It's not perfect but it'll do for a pre-shape. This one will go straight into the oven when she's done. ❤️ This will be my 5th loaf with Audrey II.

I had some extra, spicy guac that had no purpose so.... Onto some toasted sourdough it went. Don't judge me, it was delicious. I'm almost out of my best loaf and it'll be onto the gummy Cursed Loaf ™️ next. 🤣 That said, unless it's inedible, it won't go to waste. My 16 y/o son has claimed it. ❤️

I was wrong, today is 2 weeks 6 days. Man, it's blurring together, at this point. I put Audrey II on top of the stove while I have a roast going because I wanted her to rise faster... And man, she's HAPPY to be warm! (stove top registers 76°F, kitchen 71°F) She's bubbly and active! #sourdoughstarter

She's working on it. Slow but steady... #sourdoughstarter 2 weeks and 5 (?) days I think. She's happier at warmer temps than the 64°F ish she's kept at and it shows... 😭 But we're persevering at room temp.

For reference, on my #hobbies list, I also make #beadedkeychains. Mostly, as I show you, "decorative" keychains instead of "functional" keychains. 2 of these I have kept for myself which - which I mention in the alt text. I will be selling these at an event soon... I also have more than just these.😅

This is the fourth loaf, bisected. This was done yesterday 12/3/24 but cut this morning because it was too late to cut it last night by the time it was cool. It is gummy and dense, which I anticipated because I messed up the bulk fermentation time. Next time we'll be better! #breadsky #sourdough

You're right that chasing "the perfect loaf" is unreasonable. 😅 I'd just like better and that will come with practice, right?

It's... Done... At least.
The Cursed Loaf ™️ is named as such because it started as any sourdough does... But then it got horrifically messed up during BF, got under-fermented, got stuck to the banneton after cold fermentation, had to be reshaped, and then we have this. All in the name of #learning

Because this is my 4th loaf, ever, I'm going based off of this chart by thesourdoughjourney.com and I calculated my start time VS end time wrong because I was tired and due to how I had the hours listed in my notes app. I thought I was 2 hours more in than I was which was 20% difference in rise! 😭

😭❤️ Thank you so much! It's so much better compared to the first two so I'm actually happier than I am disappointed - and I'm learning!

I am fighting time. I found this chart that said I should've waited 15 hours at 67°F instead of 13 and then should've done a shape/final shape and cold proof.

She's good and active at 64°F, just slow. I know I keep saying this but it's just true and remains true. She's adapted nicely to being at this temperature. Audrey II is bubbly and happy this morning. I won't be able to feed her for a couple hours so hopefully she's not "mad" (deflating) by then. 😂
