Ok I also have to rec Direkte Boqueria. I was there for a lunch seating years ago and this dish, the surf and turf, haunts me to this day.

This is all veg.

This broke my brain a little and it’s such a fun feeling.

The three things I was most excited to eat on a visit home

A plate featuring a fillet of saba (blue mackerel) sliced into sashimi portions with the skin up being flambéed via an Iwatani kitchen torch. The flames are blue in the center and orange at the edges, and they flare out in an explosion of orange as they hit the silver and black striped fish. The fish rests on a plate next to various garnishes - a slice of lemon, a dab of wasabi, hot mustard, green onion rounds, spiky brown seaweed, and slivered white onions. A bowl of shave ice mounded and covered in azuki beans and condensed milk, with bits of colored mochi peeking out along the edges. The visible ice is dyed yellow and red by favored syrups.
