I 100% agree - and its so easy to despair - I'm choosing to be the change I want and voting accordingly - unfortunately too many people want simple answers and are unwilling to face reality.

Dinner was some blade steak (sous vide for 90 mins to render fat and start breaking down cartilage) with a melange of vegetables - broccoli and broad beans from the garden and the rest from the fridge. Potatoes roasted in lard (leftover from rillettes last week)

Beef and broccoli with shiitake mushrooms. It was amazing- got the velveting perfect and the sauce was just sooo good. 11/10 I hope I remember what I did for next time.
