Next up will be 55% Hawaiian chocolate and organic goat milk with a light dusting of Hawaiian sea salt and sweetened with organic cane sugar.

100% Hawaiian grown cacao, organic cane sugar, organic goat milk. I’m introducing the dry ingredients slowly to allow even distribution of the chocolate and not put stress on the equipment! Gradually the mix becomes more liquid.

Nibs already pulverised, the wheels are coated with .0250g coco butter, time to add sugar & milk powder! The dry ingredients you have to add slowly.

Cutting banana leaves to line the cooler. The banana leaves have a natural yeast that helps break down the sugars of the cacao fruit.
