For health reasons (recommended by doctor), both my husband and I were trying to lower our sodium intake, and baking bread was one of the only ways for us to enjoy bread while controlling sodium because there are very few lower sodium alternatives.

That whatever they've done *is* right because that was why they were singularly chosen for their task. But that kind of thinking really just validates anything, which explains why they can have such mercurial positions over their lifetime.
