Finally got a good bake on this one after numerous variations. It starts as a biga using about 40% of the total flour (KA bread flour). The final dough is a mix of bread flour, spelt, and Bob’s Red Mill gluten flour to counter the spelt tendency to flow
It’s great as toast or with PB&J

⚒️🧪 Looks like the Mendocino Triple Junction at it again!
At this spot, three tectonic plates come together, and since they're all moving in different directions and at different speeds, there's a lot of activity. This area has M6+ earthquakes more often than anywhere else in California.

This is from The Rye Baker by Stanley Ginsberg, a must have book for rye fans. It’s an 85% hydration rye dough so really hard to wrangle. Like shaping glue

Yet another plea to people who are using or following people off follow-farming hashtags like #NoDemUnder1K, #NoDemUnder5K, #BlueCrew, #FBR, etc etc: please do not do that, it's how disinformation operations work. I'm already seeing accounts in those hashtags that are likely disinformation ops. 1/
