Hi 👋 no, I don’t add any yeast to the sourdough bread. There’s none needed.
Jim Lahey’s no knead bread recipe - if that’s the one you mean - uses a small amount of commercial yeast for the overnight rise. Sourdough uses only sourdough starter to leaven the bread.

I think freezing an unbaked sourdough loaf is a solid option for making fresh sourdough work for your schedule - if you suddenly have safety switch problems like me, your plans change, or you just couldn’t bake on time.
Definitely worth trying!
