Bad hard boiled eggs are as you described... "Proper" or even "good" hard boiled eggs aren't that bad... But it's deceptively hard to make a decent one to start with...

"Wanna eat 6 hard boiled eggs?" "Uh.. no." "What if I cut them in half, scooped their guts, mixed it with mayo, mustard and spices and then squirted it back in the hollowed out halves?" "... gimme 24 and keep your hands clear or risk losing them." ;)

Buttermilk or cream of tartar with regular milk.... My aunt tried swapping for vinegar and milk... didn't work quite as well as it was too fast a reaction and the gas basically escaped before there was sufficient structure to hold it....
