Indirect on a gas grill. Ran the grill about 300 till internal temp was 115-120. Then seared it off on the hot side. Key is letting it rest covered 20 mins before cutting.

You covered the grilling basics quite well especially recommending a chimney. I'll add that the best starter grill for the $ and versatility is a Weber Kettle. Easy to graduate from grilling steaks to smoking ribs and shoulders on a kettle.
