True peasant food. Chicken backs and wings (I spatchcock chicken a LOT}, 1 carrot diced small, 2 stalks of celery diced small, 1/4 onion (with skins), 1 crushed garlic clove, 2 sprigs of fresh thyme, one sage leaf sliced thin, salt and pepper. 3 hours simmering and I'll make matza balls to go, too.

My family Coat of Arms. The suit of armor represents being in the Crusades and the Egyptian banner holders signifies that the family is one of the oldest in Europe. The colors and details have further meaning, but I can't remember the specifics.
