True peasant food. Chicken backs and wings (I spatchcock chicken a LOT}, 1 carrot diced small, 2 stalks of celery diced small, 1/4 onion (with skins), 1 crushed garlic clove, 2 sprigs of fresh thyme, one sage leaf sliced thin, salt and pepper. 3 hours simmering and I'll make matza balls to go, too.

Spent the afternoon in the north Pacific. . .Park and Shop Asian Market in the Pacifica Square in Naperville. Awe inspiring. Then on to Mo Tea and Bahn Mi for lunch. There is nothing like black milk tea with bobba pearls. YUM!

Even great states have their flaws. Case in point. I worked full-time all of my life - I was the breadwinner of the family. Naturally, I get monthly social security payments. Naturally, they are a LOT less than a man would have after over 50 years of employment.
