This post does good job addressing big misconception. Just being vegetarian doesn't guarantee a healthy diet. A go-to meal I make is quesadillas. To make it nutrient dense, I use whole wheat tortillas for fiber, add beans/tofu to increase protein intake and add sautéed veggies for vitamins. Using sprinkle of regular cheese or just reduced fat cheese helps lowers saturated fat. #BEH353 @beh353.bsky.social

Fairly accurate but not perfect. Remembered most meals; forgot small snacks or exact amounts. Recalling portion sizes was challenging. Writing it down made me realize I'm eating more snacks with hidden sugars and fats than I thought, and how quickly calories add up. #BEH353 @beh353.bsky.social

Fat more important than what people realize. Dietary fat not only major source energy, required for absorption of fat soluble vitamins like A, D, E, and K. Not enough fat in diet, body can't absorb vitamins effectively. Can impact vision, immune function, bone health.
