It is true. Dark pans result in darker baked goods which is why a lot of recipes tell you to decrease the baking time by 3-5 minutes.

It’s more work and less reward because it makes the cream cheese loose which means it’s more likely to split the pastry while it bakes (ask me about that trauma). It’s the reason a lot of recipe developers leave the pastry open 😂
