I could have used a 9x9 instead of a larger pan, but I'm pretty pleased with how it turned out.

Baking directions from an old cookbook, Sweet Potatoes - Jersey Sweets, Yams Amount for 4 servings: 2 pounds (about 6 medium). Season available: All year long When shopping: Look for smooth, even colored skins; potatoes that are firm and nicely shaped. Ways to serve: Buttered, with salt and pepper Mashed or candied.... In soufflés TO PREPARE Wash sweet potatoes but do not pare TO COOK Heat enough salted water to cover potatoes (1/2 teaspoon salt to 1 cup water) to boiling. Add potatoes. Cover and heat to boiling cook 30 to 35 minutes or until tender. Drain. Slip off skins. Leave potatoes whole, or mash. Recipe text: CANDIED YAMS OR SWEET POTATOES what's the difference between yams and sweet potatoes? Yams are more moist and orange colored-they're also sweeter than the "sweets. 2 pounds sweet potatoes or yams* (about 6 medium) 1/2 cup brown sugar (packed) 3 tablespoons butter or margarine 3 tablespoons light cream or milk % teaspoon salt If using fresh sweet potatoes, prepare and cook as directed on page 439. Cut each potato crosswise into 12-inch slices. In medium skillet, combine brown sugar, butter, cream and salt; cook over medium heat, stirringconstantly, until smooth and bubbly. Add sweet potato slices; stir gently until glazed and heated through, 4 to 6 servings. *Or, use 1 can (1 pound 1 ounce) vacuum-packed sweet po- tatoes; cut each into 1/2-inch slices. VARIATION Pineapple-Sweet Potatoes: Omit cream and add 1 can (8% ounces) crushed pineapple, drained.
