I'm pleased with a new no-knead bread: 250g white whole wheat flour, 250g bread flour, 30g melted butter, 30g malted barley syrup, 360g whey (from making Greek yogurt). 4 stretch and folds, bulk rise to 2 liters volume, 45 minutes proof, bake 5 minutes at 425 with steam, then 350 till done.
